BREAKFAST EGGS CASSEROLE

350 degrees for 30 min (I allow an extra 1/2 hour or so) - 12 servings

8 slices bread
8 eggs
1 pound Velveeta cheese
3 cups milk
2 teaspoons salt
2 teaspoons dry mustard
ham, or bacon

Trim crust off bread and cut into 1 inch cubes. Put in buttered 9x13 pan. Sprinkle grated cheese on top. Beat eggs a little and mix with milk and seasonings. Pour mixture over bread and cheese. Sprinkle with paprika. Cover with foil and bake 1 hour at 350 degrees for 50 minutes covered and 10 minutes uncovered. This can be prepared a day ahead and refrigerated until ready to bake. Allow to set a while before serving

BRUNCH EGG CASSEROLE

350 degrees for 45 min - 12 servings

Superb

2 packages Jimmy Dean sausages
12 eggs
2 cups milk
2 teaspoons salt
2 teaspoons dry mustard
4 slices bread, cubed with no crusts
2 cups cheddar cheese, grated

Beat eggs well. Add rest of ingredients. Stir in browned and drained sausage. Refrigerate overnight. Bake.

Optional: Heat 1 can of cream of mushroom soup, add extra mushrooms. Pour over and sprinkle with paprika when baked. I don't care to add this

BUTTERMILK PANCAKES

1/4 batch feeds 4 of us


8 eggs
2 quarts buttermilk
7 to 6 cups flour
2 teaspoons baking soda
8 teaspoons baking powder
2 teaspoons salt
1/2 cup sugar
1 cup margarine, melted

Beat eggs; add buttermilk, flour, soda, baking powder, salt, and sugar. Add melted margarine last. Bake on hot griddle until brown. Serve with butter, syrup, or jelly

CARROT MUFFINS

25 minutes at 350 degrees - 48 servings

4 eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon salt
3 teaspoons baking powder
2 cups carrots, grated
1 cup raisins

Soak raisins in hot water for 5 minutes. Then drain. Beat eggs well. Add rest of ingredients in order given and mix well. Fill greased muffin tins 1/2 full of batter. Bake 25 minutes at 350 degrees

DOUGHNUTS

6 eggs, beaten
2 cups sugar
1/2 cup sweet cream
1/2 cup sour cream
2 cups milk
4 teaspoons baking powder
7 cups flour
2 teaspoons vanilla
dash salt
1/2 teaspoon nutmeg

Mix in order given, use doughnut maker. As soon as doughnuts hit hot oil, turn. Don't use too hot of oil around 365 degrees. When doughnuts come to top, turn. Turn as see fit. Let quite a bit of dough drop out. If you sugar them right out of the oil, the sugar dissolves. Let cool first before you sugar. If batter too thin add a little more flour, if too thick add a little milk

FRENCH PANCAKES

2 large eggs
2/3 cup milk
1/2 cup flour
1/2 teaspoon salt
1 tablespoon butter, melted

Beat together and pour on hot skillet. These are thin and do not take long to cook. Brown on both sides and done. Roll up with butter and sugar. Some people like syrup on them too. Others will put fruit and cream in them

LUCILLE'S HOMEMADE DONUTS

8 eggs, beaten very well
4 cups sugar, add and beat
4 teaspoons baking powder
4 teaspoons salt
2 teaspoons baking soda
2 teaspoons nutmeg
2 teaspoons vanilla

1 quart buttermilk

10 cups flour, slowly add and don't level off
8 tablespoons oil, add last

Beat the large eggs and add the sugar. Beat together and then add the baking powder, salt, soda, nutmeg, and vanilla. Add the buttermilk a little at a time. Then slowly mix in 10 cups flour. After all mixed well add the oil. Deep fry at 375-400 degrees using a donut dropper

RAISED DOUGHNUTS

36 servings

1 1/2 packages yeast
1/2 cup water
1/2 cup sugar
6 1/2 cups flour
2 teaspoons salt
1 cup scalded milk
1/2 cup shortening, melt in milk
1 cup cold water
1 teaspoon nutmeg
6 egg yolks, or 3 eggs

2 cups powdered sugar
1 tablespoon butter
1 teaspoon vanilla
1 tablespoon cornstarch
boiling water, add till thin

TOP INGREDIENTS: Add sugar, salt, to shortening and scalded milk and cool. Add yeast to 110-155 degree water. Add 6 cups flour and water to milk mixture. Add yeast and egg yolks, then rest of flour. It has to be stiff enough to knead but not too stiff. Raise 2 hours, punch, raise 1 1/2 hours. Roll 1/2 inch thick. Raise 45 minutes or so. 365 degree fat. Double to make 5-6 dozen. All egg yolks are best.

SAUSAGE 'N' EGG CASSEROLE

8 slices bread, cubed with no crust
3/4 pound cheddar cheese, grated
2 pounds sausages, browned
4 eggs, beaten
2 1/4 cups milk
3/4 teaspoon dry mustard

Layer bread, cheese, meat in a 9 X 13 pan. Mix eggs, milk, and mustard. Pour over meat. Refrigerate overnight.
Bake 325 degrees for 1 1/2 hours.

You can mix 1 can golden mushroom soup with 1/2 cup milk and pour over right before cooking. This is okay but not the favorite thing to do

2 eggs
1 cup sugar
1/2 cup sour cream
1/2 cup sour milk
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon baking soda

2 teaspoons sugar
1/4 teaspoon salt
1 cup water
3 tablespoons oil, canola
2 egg yolks, beaten
2 egg whites, stiffly beaten

Preheat waffle iron. Mix dry ingredients thoroughly. Stir in water, shortening or oil, and egg yolk. Mix well. Fold in beaten egg whites. Bake in hot waffle iron, using 1/2-2/3 cup batter per waffle
