CHEESIE HASH BROWN CASSEROLE

1 hour at 350 degrees - 8 servings

1 onion
2 tablespoons margarine

1/2 pound cheese, Velveeta
1 stick margarine
8 ounces sour cream

7 cups hash brown potatoes

Saute onion and margarine.

Melt cheese and margarine together and then fold in sour cream.

Pour all above over hash brown potatoes and bake

CORN CASSEROLE

Microwave - 6 servings

1 10 oz. package frozen corn, defrosted
1 16 oz. can cream style corn
3 eggs, well beaten
1/2 cup whole milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup cracker crumbs
butter, or margarine

1. In a medium-sized bowl place cut corn. Add can of cream-style corn and mix together well. To corn mixture add milk, beaten eggs, salt and pepper. Stir until thoroughly blended.

2. Lightly butter a 2 quart heat-resistant, non-metallic casserole.

3. Pour 1/3 of corn mixture into casserole. Cover with 1/3 of the crumbs. Dot with butter. Repeat until all ingredients are used. Be sure to end with crumbs dotted with butter.

4. Heat, covered, on ROAST setting for 8-9 minutes. Remove cover and heat on ROAST for an additional 2 minutes

CREAMED CUKE SALAD

4 cucumbers, peeled and sliced
1 sliced med sized onion
1 1/2 cups mayonnaise
1/4 cup vinegar
1/8 cup sugar

In a large sheet of tinfoil I slice the potatoes (garden fresh are the best!) and then I put butter on top and whatever else you would like on the list too. I usually add some American Cheese. Then grill about 15 minutes longer than your steak. So you need this on first

LAYERED VEGETABLE SALAD

12 servings

1 1/2 cups frozen peas
1 large chopped green pepper
1 small chopped head lettuce
1 medium chopped onion
1 cup carrot, shredded
3 celery stalks, sliced
1 cup cheddar cheese, grated
8 slices bacon, cooked, drained, and crumbled
1 cup mayonnaise, or salad dressing
1 teaspoon sugar

Line bottom of 9 x 13 cake pan with layer of lettuce, then put remaining ingredients layered on top. Spread dressing as you would icing. I sometimes use a little more. Sprinkle with sugar and top with bacon (can use 1/2 cup bacon bits). It will keep in refrigerator 3-4 days. Can be garnished with tomatoes, black or green olives and slices of hard-boiled eggs

 

PARTY POTATOES

10 pounds potato

2 cups sour cream

12 ounces cream cheese

4 teaspoons onion salt

1/2 teaspoon pepper

1/4 cup butter

Boil and mash potatoes. Before mashing, add cream cheese, sour cream, butter, onion salt, and pepper. Refrigerate or Freeze. Reheat in crock-pot when needed.

POTATO SALAD

Cut up cooked potatoes.
Boil eggs: bring to a boil, shut off and let sit covered for 20 min. no more. Cover with cold water and peel.

SCALLOPED CORN

1 cup milk
1 egg
1 cup cracker crumbs
butter
1 15 oz. can corn

Heat milk and corn. (use microwave) when hot, add beaten egg and cracker crumbs slowly (stir). Put cracker crumbs and butter on top. Bake until light golden brown on top.

SWEET POTATO CASSEROLE

20 min at 375 degrees


4 sweet potatoes
1/2 cup butter
2 eggs
1/2 cup milk
1/2 cup brown sugar
1 teaspoon vanilla
pecans, chopped
miniature marshmallows
pineapple, rings
cherry
brown sugar

Boil the peeled sweet potatoes until tender, and then mash. Add the butter into the potatoes. Add the eggs and beat vigorously. Then add milk, brown sugar and vanilla. If you wish miniature marshmallows and chopped pecans may be mixed in. Place in a casserole, cover top with pineapple rings and cherries and sprinkle brown sugar over top. Bake 20 minutes at 375 degrees. Makes a large casserole
