APPLE PIE

1 hour at 350 degrees - 6 servings

1 cup sugar
2 tablespoons flour
2 to 1 teaspoon cinnamon
apple

Mix the sugar, flour, and cinnamon mixture together. Put some on bottom of pie shell. Slice in fresh apples. Add some mixture every so often till pie shell full then pour rest on top. Top with crust and seal. Poke a few holes in the top and sprinkle on a little sugar and bake..

BANANA CREAM PIE

6 servings

1 cup hot milk
1/4 cup sugar
2 egg yolks
1/2 cup water
3 teaspoons cornstarch
banana

Mix the sugar and the cornstarch and add the other ingredients. Cook until thick and add bananas. Pour into a baked pie shell

CREAM CHEESE

6 servings

8 ounces cream cheese
1 cup powdered sugar
1 teaspoon vanilla
1 8 ounce whipped topping, Cool whip works

Blend together with mixer . Fold in the Cool Whip. Put into baked pie crust and top with a pie mix or zig zag with chocolate. Chill before serving

DIVINE LIME PIE

6 servings

4 egg yolks
1/4 teaspoon salt
1/2 cup sugar
1/3 cup lime juice, fresh or bottled
3 to 2 drops green food color
1 cup whipping cream, chilled
1 pie crust, baked

Beat egg yolks in a small mixer bowl until light and lemon colored. Mix sugar, salt, lime juice and egg yolks in sauce pan. Cook over medium heat - stirring constantly. Cool. Stir in coloring. Beat whipping cream until stiff. Fold in lime mixture. Spoon into pie shell. Refrigerate at least 4 hours. Garnish with sweetened whipped cream on top. I whip about 1/2 or 3/4 cup for this.

Can use graham crust too:
1 1/4 crushed graham crackers--3 Tbls. sugar--1/4 cup melted oleo. Bake 4-6 min. at 350 degrees

LEMON PIE

6 servings

3 tablespoons cornstarch
1 1/4 cups sugar
1/4 cup lemon juice
3 eggs, separated
1 1/2 cups boiling water

Make like pudding. Pour into a baked pie shell. Use the egg whites to make the meringue on top

PEACH PIE

400 degrees for 15 minutes then 350 degrees for 25 minutes

3 cups flour

5 tablespoons cold water
1 teaspoon vinegar
1 teaspoon salt

Cut the lard into the flour till mixed and crumbly. Then combine the other ingredients and add to the flour mixture. Roll out on a floured cloth

PUMPKIN PIE

450 degrees for 10 min then 350 degrees for 50 min

6 servings


3 eggs, beaten and add:
1 1/2 cups pumpkin or winter squash
1/2 cup brown sugar
1/2 cup white sugar
1/2 teaspoon salt
2 tablespoons molasses
1 1/4 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon vanilla
1 cup milk, or 1 1/2 cups cream

If using fresh pumpkin, mix in a blender to chop it all up. With canned pumpkin you can use a mixer

RHUBARB PIE

450 degrees for 10 min then 350 degrees for 30 min

3 cups rhubarb, chopped
1 1/2 cups sugar
2 eggs
3 tablespoons flour
1 teaspoon nutmeg
1 tablespoon butter

Place in pie crust and then top with a latice crust

SOUR CREAM RAISIN PIE

6 servings

1 cup raisins
1 cup brown sugar
3 egg yolks
1 1/2 cups sour cream
2 tablespoons cornstarch
dash cinnamon
dash nutmeg
dash allspice
1 teaspoon vanilla

Cook on top of stove stirring almost constantly till thick like pudding. Then pour into a baked pie crust

STRAWBERRY PIE

6 servings

Easy Way

1 package vanilla regular pudding mix
2 cups water
1 teaspoon lemon juice
Boil together and add:
1 package strawberry jello
Cool and then Pour over strawberries in baked pie crust.

If you use frozen strawberries perhaps you should use a little less water with pudding and I have added the frozen strawberries to pudding mixture while it is hot
