GRANDMA FOOTE'S SAUCE FOR SUET PUDDING

1 cup sugar, use brown sugar if brown syrup desired
1 1/2 tablespoons flour
1 tablespoon butter
1/2 teaspoon salt
1 cup hot water
1 teaspoon vanilla

Mix well and cook 3 minutes. Add 1 teaspoon of vanilla at the end and sever hot on the pudding

GRANDMA FOOTE'S SUET PUDDING

steam 3 hours - 12 servings

2/3 cup milk
1 cup brown sugar
3 eggs
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/3 cup molasses
2/3 cup suet, ground
1/2 teaspoon baking soda
2 3/4 cups flour

Mix all together and steam for 3 hours at 325 degrees. Serve hot. This uses an oven steamer but could probably be done on top of the stove as well

KRINGLA

425 degrees for 8-10 min



1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon salt
2 egg yolks
1/2 cup shortening, not margarine
3 cups flour
1 cup buttermilk

Mix sugar, shortening, egg yolks, and salt. Mix soda in a small amount of buttermilk; add and beat with mixer until fluffy. Then add the rest of the buttermilk. Sift together 1 cup flour and the baking powder; add to above ingredients. Add vanilla and 2 cups flour. Refrigerate for several hours. roll out on lightly floured board into figure eights. Bake

Add enough flour so that it will roll--about 3 1/2 cups worth

1/4 cup shortening

2 cups flour
1 teaspoon salt

When the milk and shortening just start to boil, pour into the flour. Roll into balls while still hot. Then you can roll out like pie crust on a floured surface and fry on griddle with very high heat

RICE

4 servings

1 cup uncooked white rice
2 cups water
1 teaspoon salt

Use a three quart sauce pan and a tight fitting cover. Put all together in it. Stir some, then bring to a boil. Stir once or twice, lower the heat and let simmer for 14 minutes. Keep covered at all times.

(water should be gone) Fluff it in the air, put 2 teaspoons butter on it and stir around-add salt and pepper to taste
